Annie and Armin would have spoken with Sylvia proposing doing maintenance and upkeep on the stables in exchange for being able to stay in there (and meals, if possible) on the premise that both are familiar with horses, and a degree of construction work and maintenance. If agreed, they'd have started working on upkeep, fixing the stalls, getting rid of moldy hay, sorting out tack and polishing it while they have downtime between their odd jobs picked up around the village (technically goose feather picking up and postal work).
If there wasn't a set place for a midden heap of sorts, or more good places for spreading manure, they'd have set such a thing up, because ain't nobody leaving horse poo in a pile to explode otherwise (as legitimately happens ahahaha whoops).
Supplies will be scavenged from the area and then probably traded and bargained for among villagers, pilfered from abandoned homes (think bedframes and other sundires that wouldn't be needed right away by any returning villagers).
